Open Flavor Fridays - Brewing Beer

Too rarely I get the opportunity to brew beer. It is something that I enjoy, but the prep time and clean-up are both kind of dull. So I drink other beer and wait too long for my own. Over the holidays I have a lot of time, so I'm brewing three beers.

Brewing beer is like baking or roasting coffee. It is art and it is science. It can also be messy and requires great cleanliness. During the season the time necessary to brew is hard for me to find. The good news for me is that I need to find something to do with my week off around Christmas when my work offices shut down.

So I will be brewing beer.

Recently I acquired my third carboy thanks to an awesome loyal reader (thanks Nick!) so that means I can get three beers fermenting at a time. Here's the thing, I only have one recipe in mind right now. A couple years ago my attempt at Honey Badger Wheat went bad. I need to do that again and get it right.

The other two batches need inspiration. With that in mind I'm asking you guys. Previous homebrews are Cascadia Rising Red Ale (normal and Imperial), #2 - An American English Strong Ale, Zach Scotch Man Marker, EXCUSES Scotch Ale and certainly others that aren't coming to mind right now.

Ideally I'd do one quick batch that can bottle in a couple weeks and one that can rest for a while patiently waiting for the proper age.

What should I brew?
